If there’s one thing I’m always looking for, it’s another dinner I can throw together without making my evening more complicated.
So, welcome to Menu Monday, a new Macaroni KID series sharing realistic meal ideas for local families — with a little help from people right here in our community.
And I could not think of a better person to kick it off.

Meet Sarah from The Magical Slow Cooker
When I found out that Sarah, the creator behind The Magical Slow Cooker, is right here in Springfield, I immediately wanted to feature her.
I reached out and asked if she’d be willing to share one of her family-friendly slow cooker recipes for Menu Monday.
She sent me three.
Which, of course, meant I had to choose.
For our first one, I went with her Meatball Pot Roast — partly because it looks like exactly the kind of cozy dinner I want once fall hits, and partly because Sarah described it as “super popular and great tasting.”
That was enough to convince me.
This is basically comfort-food dinner meets “please don’t make me do a bunch of work at 5 p.m.”
It’s exactly the kind of meal I wanted Menu Monday to be about: approachable, family-friendly and something that can make the dinner part of a busy weekday feel a little easier.
Because this is Sarah’s recipe, I’m not going to recreate the whole thing over here. I want you to head straight to The Magical Slow Cooker for her full recipe, instructions and tips.

Sarah actually gave me three recipes to choose from, and she was kind enough to let me keep all three.
So we’ll be bringing The Magical Slow Cooker back to Menu Monday over the next few months with a couple more dinner ideas.
For now, though, Meatball Pot Roast is up first.
If you make it, let me know what your family thinks — because I am always looking for another dinner to add to the rotation.
Twice a month, we’ll be sharing another realistic meal idea from a local cook, creator or family.
