MENU MONDAY
Realistic meal ideas for local families

Dinner does not have to be elaborate to be a win.

For this week’s Menu Monday, local registered dietitian Tok-Hui Yeap of Kinder Nutrition is sharing a recipe that both the kids and adults in her family enjoy: Crispy Parmesan Chicken Tenders.

That sounds like exactly the kind of recommendation I want from someone who understands both children’s nutrition and the realities of feeding an actual family.

Meet Tok-Hui from Kinder Nutrition

Tok-Hui Yeap, RD, CSP, LD, is a registered dietitian and the owner of Kinder Nutrition here in Eugene.

Kinder Nutrition supports children and families with individualized nutrition guidance for concerns including picky eating, food allergies, gut health, infant nutrition and neurodivergent feeding.

When I asked Tok-Hui to share something for Menu Monday, she sent over a recipe that adults and kids both enjoy in her own household.

These homemade chicken tenders have a crispy panko and Parmesan coating, and they can be cut into strips or triangles based on what your child prefers.

Add your family’s favorite dipping sauce and an easy side, and dinner is handled.

Crispy Parmesan Chicken Tenders

A family recipe from Tok-Hui Yeap of Kinder Nutrition

Ingredients

  • 2 chicken breasts, approximately 5–6 ounces each
  • ⅓ cup all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon freshly ground pepper
  • 2 eggs
  • 1 cup panko breadcrumbs
  • ⅔ cup freshly grated Parmesan cheese
  • Approximately 1 cup cooking oil, for frying

Instructions

  1. Cut the chicken breasts into strips or triangle shapes, depending on what your child prefers. Set aside.
  2. Combine the flour, salt and pepper in a large bowl.
  3. Beat the eggs in a separate bowl.
  4. Combine the grated Parmesan cheese and panko breadcrumbs in a shallow baking dish or pan.
  5. Lightly coat each piece of chicken in the flour mixture. Dip it into the beaten eggs, then coat it evenly with the panko and Parmesan mixture. Repeat until all the chicken is coated.
  6. Add approximately one inch of cooking oil to a 10-inch skillet and heat over medium heat.
  7. Once the oil begins to glisten, carefully add the chicken. Pan-fry for approximately three minutes on each side, or until golden brown and the internal temperature reaches 165°F.
  8. Serve with your family’s favorite dipping sauce and enjoy!

A dinner worth adding to the rotation

I love that this recipe feels familiar enough for kids while still being something the grown-ups at the table can enjoy, too.
